Here’s an interesting article on “healthy” bread types. (The article doesn’t consider those that are unable to process gluten.)

USA Today:  What is the healthiest Bread?  One is best, but your options for a healthy diet are aplenty.

At Struttin In The Kitchen – Bakery we offer breads made just for you…regular yeast items (breads, English muffins, buns, and bagels), sourdough items (breads, English muffins, buns, and bagels), no rise bread items (tortillas – with others to come), and “No Wheat, Rye, or Barley” items1, as well as a variety of flavors such as Struttin Stuffin’ (when toasted tastes like warm stuffing – great for chicken/turkey sandwiches), Cinnamon Raisin (or just Cinnamon), Whole Wheat, Pumpernickel, and others coming soon.

We also consider special requests with recipe submitted by you.  However, if you don’t have a recipe for your special request I can search for several and try them out.  Once I have a recipe, I think you’ll like, I’ll add the item to the Bakery page on the website and let you know it’s available to order.  (You may also get a free loaf or two so you can determine which recipe you prefer.)  Send your special request by FB message or email from website.

We bake the breads on the same day as pick-up (Bread made just for you…).  You can order any time; however, pick-up day/time is determined by the type of rise needed. (See chart below.) I do have a full time (40+ hours a week) job, so the mixing of the dough is done Thursday through Sunday. Baking of items is done Saturday through Monday morning (before work).  Sourdough items may have a rise time of up to 36 hours therefore they have an extra day of prep time.)

Unfortunately, some of my bakes don’t shape the way I’d prefer (most of the time flatter than expected) but they are still good.  When this happens, I will give you the option of waiting an extra day for a better loaf (of same or different shape) or accepting the flat loaf for ½ price.

When possible, I use natural, organic ingredients. I substitute honey for sugar in most recipes. I am learning about milling flour and would like to find a nearby farm for milk, butter, and eggs.  (And I love Nate’s Honey, McKinney, TX.)

1 “No Wheat, Rye, or Barley” options are available for most of our items – except pumpernickel.  Important Notes:  These items are not tested for gluten free certification.  We do take precautions to prevent cross contamination, however, this doesn’t eliminate the possibility of cross contamination.
